Thank you for your website. I have made stock using your crock pot chicken stock/broth recipe before, with great success. Tonight I’m using the bones from our Thanksgiving turkey to do a batch. I have a couple questions for you: 1) I’d like to use the turkey neck to make a batch of broth. Do I need to boil the neck first, or can I just toss the raw neck and veggies in and let her rip? 2) What changes to the veggies/seasonings should I make when I turn the ham bone into stock?
Hi Moira. I would flavor the turkey broth like I would a chicken broth, but it’s up to you and your tastebuds. If you are cooking your broth 12-24 hours, then I would have no worries cooking your raw turkey neck because it will cook. You can throw bay leaves and peppercorns in your ham stock if you want.
