Gingerbread waffles aren’t just for Christmas or the holidays. I first started making these waffles  in the merry, merry month of May a few years back. One of my daughters along with myself needed a little iron boost. The naturopath gave us a list of iron-rich foods. Lo and behold molasses made the list of iron boosters.

I was trying to think of different foods to augment our iron intake.  Since we usually have a weekly fix of waffles, it made perfect sense to have a little gingerbread flavor infusion.

I love to use oats that have been blended into a flour to make waffles. The oats make the waffles more hardy AND make them easily gluten-free if needed without any weird flour-blends or ingredients for those of us who only occasionally need to bake gluten-free.

Gluten-free Blender Gingerbread Waffles We started with my favorite blender oat flour pumpkin waffle recipe and kept working it until we got just the right harmony of molasses and cinnamon and ginger. I doubled the original recipe since I want leftovers. It’s made dairy-free with your choice of dairy-less milk. I’ve made this vegan with “chia eggs” many many times. I usually decide what kind of eggs to use based on the quantity we have left in the fridge since my egg-loving husband starts off most days by protein-loading.

Gluten-free Blender Gingerbread Waffles

I’ve blended up this recipe in both the Vitamix and Blendtec. If you don’t have a high powdered blender, just blend up the oats in a standard blender or food processor, and then pour the oats into a large mixing bowl or standing mixer (I love my Kitchen Aid), and stir the batter until just combined.

Ingredients

  • 3 Cups Oats
  • 2 Tablespoons Baking Powder
  • 1 Teaspoon Salt
  • 2 Teaspoons Cinnamon
  • 1 Teaspoon Ginger
  • 1/2 Teaspoon Nutmeg
  • 1/4 Teaspoon Cloves
  • 2 Cups Milk of choice I use coconut milk beverage.
  • 1 Tablespoon Vinegar
  • 1/4 Cup Molasses
  • 2 Eggs or Egg-substitutes 2 Tablespoons chia seed with 6 Tablespoons water.

Instructions

  1. Grease waffle maker, and heat waffle iron. 

  2. Place the first 7 ingredients in a high powered blender until oats are a flour and the ingredients are well combined.

  3. Stop the blender and add the remaining ingredients. Blend until smooth.

  4. Cook batter according to waffle maker instructions watching carefully until it indicates the waffle is ready.
