Vegan Potato Salad

Ingredients

olive oil

lemon juice

dijon mustard
salt to taste
pepper to taste

cups
boiled red potatoes
3
celery ribs
diced
1/4
cup
red onion
dice
2
Tbs
capers
2
Tbs
fresh parsley
chopped
Instructions
In a small bowl combine olive oil, lemon juice, dijon mustard, salt, and pepper.
In a large bowl combine boiled red potatoes, celery, red onions, and parsley.
Pour olive oil mixture over potatoes.
Serve warm or chill and serve cold.
