Vegan Potato Salad

Ingredients

  • 1/4 olive oil
  • 3 Tbs lemon juice
  • 2 Tbs dijon mustard
  • salt to taste
  • pepper to taste
  • 4 cups boiled red potatoes
  • 3 celery ribs diced
  • 1/4 cup red onion dice
  • 2 Tbs capers
  • 2 Tbs fresh parsley chopped

Instructions

  1. In a small bowl combine olive oil, lemon juice, dijon mustard, salt, and pepper.
  2. In a large bowl combine boiled red potatoes, celery, red onions, and parsley.
  3. Pour olive oil mixture over potatoes.
  4. Serve warm or chill and serve cold.
