Enchilada Wraps Meal On-the-Go

Ingredients

  • large tortillas or wraps
  • enchilada sauce
  • cooked chicken black beans, or your appropriate choice of protein
  • cheese
  • lettuce chopped
  • tomatoes chopped
  • red onions chopped-optional

Instructions

  1. Heat tortilla. I use a cast iron skillet.
  2. In the lower center of the tortilla place chicken, cheese, lettuce, tomatoes, and fresh onions. Top with enchilada sauce.
  3. Fold and wrap to go. Fold in both sides toward the center, and roll up the contents in the tortilla.
  4. Repeat, and place wraps in your favorite portable container, foil or plastic wrap, or eat now.
