Citrus Cabbage Salad or Salsa

Ingredients

  • 1 head of cabbage chopped coarsely for salad or finely for salsa
  • 1 to mato chopped
  • 1 jalapeño stemmed, seeded, and finely chopped, optional
  • 3 T red yellow or green onions
  • handful of cilantro stems removed and chopped
  • juice of 2 limes
  • juice of 2 oranges
  • 1 T sugar we use coconut sugar

Instructions

  1. In a small bowl place the lime and orange juice with the sugar, and stir until combined.
  2. In a large salad bowl mix together the cabbage, tomato, jalapeño, onions, and cilantro.
  3. Drizzle citrus juice mixture on cabbage salad, and toss until thoroughly coated.
  4. Serve and enjoy! Can be stored up to three days in the refrigerator without the tomatoes..
