Cilantro Lime Dressing, Dairy-free option

Ingredients

  • 1 cup cashews soaked in water 1-6 hours, and then rinsed
  • the juice of 2 limes
  • 1/2 cup olive oil
  • 1/2 cup water
  • 1/4 cup Apple cider vinegar
  • 2-4 garlic cloves depending how garlicky you want it
  • pinch of salt
  • 2 cups cilantro packed

Instructions

  1. Place all ingredients except cilantro in a blender, and blend until smooth.
  2. Add cilantro and blend until desired texture is reached. I like to leave a little texture.
  3. Refrigerate until chilled. Dressing will thicken in the refrigerator. Stir in almond milk or water by the tablespoon to thin if desired, or serve thick.
