Raw Lemon Cherry Energy Bars

Ingredients

  • 2 cups raw almonds divided
  • 1 1/4 cup dates pitted
  • 1 cup tart dried cherries divided
  • zest of 1-2 organic lemons

Instructions

  1. In a food processor (or Blendtec) mix dates, 1 3/4 cups almonds, 1/2 cup of cherries, and lemon zest until it forms into a ball. Give it a few minutes.
  2. Place the date ball mixture on a cutting board, and add the remaining almonds and cherries.
  3. Mix all ingredients with your hands until thoroughly combined.
  4. Use a rolling pin, side of a mug, or hands to flatten the mixture.
  5. You can place the date mixture in an 8x8 pan lined with parchment paper, if desired.
  6. Cut, enjoy, cover and refrigerate the leftovers if there are any:).
