Dutch Apple or Peach Pie

Ingredients

The Crust

  • 2 cups whole wheat flour
  • 1 cup coconut sugar or evaporated cane juice organic sugar
  • 3/4 cup coconut oil or butter melted
  • 1/2 cup rolled oats

The Filling

  • 1/2 cup coconut sugar or evaporated cane juice
  • 2 T cornstarch non-GMO preferred
  • 1 1/4 cups water
  • 3 cups diced apples I leave the peels on but you can peel them
  • 1 t vanilla extract

Instructions

  1. Mix crust ingredients until just combined, and and aside 1 cup of the crust ingredients for the topping.
  2. Press remaining crust ingredients into an un-greased 9 inch pie plate, and set aside.
  3. For the filling combine sugar, cornstarch and water in a saucepan, stirring until smooth.
  4. Bring filling to a boil, and stir until thickened, approximately 1 minute.
  5. Remove from heat, and stir in apples and vanilla.
  6. Pour apple mixture into crust.
  7. Top with reserve crumble crust.
  8. Bake at 350 degrees for 40-45 minutes or until crust is golden brown.
