Mix crust ingredients until just combined, and and aside 1 cup of the crust ingredients for the topping.

Press remaining crust ingredients into an un-greased 9 inch pie plate, and set aside.

For the filling combine sugar, cornstarch and water in a saucepan, stirring until smooth.

Bring filling to a boil, and stir until thickened, approximately 1 minute.

Remove from heat, and stir in apples and vanilla.

Pour apple mixture into crust.

Top with reserve crumble crust.

Bake at 350 degrees for 40-45 minutes or until crust is golden brown.
