Yogurt Banana Bread

Ingredients

  • 3 cups mashed ripe banana
  • 2/3 cup plain yogurt can use non-dairy yogurt
  • scant 2/3 cup coconut oil melted
  • 4 eggs
  • 2 cups or less, I use 1 1/2 cups sometimes organic sugar (I used evaporated cane juice)
  • 2 3/4 cups whole wheat flour
  • 1/4 cup flaxseed meal
  • 1 1/2 t baking soda
  • 1 t sea salt
  • 1/4 cup or more walnuts

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine wet ingredients until smooth.
  3. Combine dry ingredients.
  4. Add flour mixture to wet mixture.
  5. Pour batter into two greased 9 x 5-inch loaf pans.
  6. Bake for 50 minutes-1 hour until golden brown and until a toothpick comes out clean.
  7. Cool and enjoy!
