Crock-Pot Ham Soup Recipe

Ingredients

  • 1 ham hock
  • Enough water to cover the the ham hock
  • 1 cup or more of diced or shredded ham
  • 1 15 oz. can of kidney beans drained
  • 1 15 oz. can of corn
  • 1 15 oz. can of diced tomatoes
  • 1 15 oz. can of mixed vegetables
  • 1 15 oz. can of mixed vegetables warmed up I used the microwave for 1 minute, and pureed in a blender
  • 1 cup mashed potatoes optional (make sure they are lactose-free if needed)
  • 1 onion diced (I used a red onion because that is what I had)
  • 1 T thyme
  • dash of cayenne pepper or other flavorings as desired
  • salt to flavor optional

Instructions

  1. Insert ham hock in the slow cooker.
  2. Cover the ham hock with water.
  3. Add the rest of the ingredients minus the thyme, cayenne pepper, and salt, as the salt will come out of the ham, and you don't want the soup too salty.
  4. Cook on low for 6-8 hours or on high for 4-5 hours.
  5. Add additional seasonings in the last hour.
  6. Take out the ham hock, and cut off and dice any ham on it, adding it back to the soup.
  7. Salt to taste if needed, and enjoy!
