Dairy-free Creamy Cilantro Lime Dressing

Cilantro + Lime = Foodie Love. I’ve talked before about how I had a long aversion to cilantro. It took long time, like 36 years, to give cilantro a chance. A real chance. I grew up around cilantro. My dad used it in his Mexican cuisine, but this formerly picky palate couldn’t get over its pervasive flavor. Then my friend introduced me to homemade taquitos, and soon after I read about cilantro and lime married together in a pesto. I have loved tradition basil pesto for twenty years, so the thought of cilantro and lime together in a pesto definitely intrigued me. I even made a special trip to the store to satisfy this curiosity, which if you  know me, is NOT ME. I like to make my outings multi-purposeful (that doesn’t really sound like a word, but it passed spell check, and it’s how I wanted to say it). I’ll just say the extra outing was totally worth it! Using soaked cashews makes this cilantro lime dressing not only dreamy and creamy, but vegan as well. This cilantro lime dressing is so creamy, you would not suspect it was dairy-free at all! Who knew soaked cashews would be such a great substitute for creamy dairy products?

Cilantro Lime Dressing, Dairy-free option

Prep Time 10 minutes
Total Time 10 minutes
Servings 1 1/2 cups

Ingredients

  • 1 cup cashews soaked in water 1-6 hours, and then rinsed
  • the juice of 2 limes
  • 1/2 cup olive oil
  • 1/2 cup water
  • 1/4 cup Apple cider vinegar
  • 2-4 garlic cloves depending how garlicky you want it
  • pinch of salt
  • 2 cups cilantro packed

Instructions

  1. Place all ingredients except cilantro in a blender, and blend until smooth.
  2. Add cilantro and blend until desired texture is reached. I like to leave a little texture.
  3. Refrigerate until chilled. Dressing will thicken in the refrigerator. Stir in almond milk or water by the tablespoon to thin if desired, or serve thick.

    1. Hi Julie. It really is amazing what soaked cashews can make! I’ve made a lot of dairy-free “cream cheese” desserts out of soaked cashews. Amazing!
