Admittedly this Minty Lime Watermelon Salad is one of a handful of recipes I’ve posted here and have never made (one being my husband’s Grilled Pork with Asian Sauce and maybe a few drink recipes he’s come up with). BUT my daughter, Ellie, has been a watermelon slicing machine this summer. Even though I’ve never made this, I’ve partaken and enjoyed the fruits of my daughter’s hands several times this summer.
Although we are in the middle of a small reprieve now, the heat this summer has been one for the record books here in the Pacific Northwest…and I’m sure where many of you live. My friend Riva made this to accompany one of our meals, and it quickly became a family favorite. My lime-loving lady ELL-ie (hear all that alliteration?:))always makes sure we have limes stocked, but this summer we’ve needed to keep watermelon on hand as well to be able to keep up with demand for this minty lime watermelon salad. I’m glad that we got a mint plant last year and that mint is prolific AND hard to kill;).
Side note: if we are enjoying plain ol’ watermelon, we now leave it in these rectangles to eat so we don’t get sticky-watermelon face. Thank you to the “What Have You” ladies for that tip.
Minty Lime Watermelon salad is one of the easiest salads to make and requires so few ingredients. Lime and mint AND watermelon are fresh in their own right, so together they meld into a trifecta powerhouse of vibrancy. If you’ve never tried these flavors together, don’t walk, run to your nearest watermelon-selling store and make enjoy!
Ingredients
- 6 Cups Watermelon, cubed
- 1 Lime, zested and juiced
- 4 Teaspoons Fresh Mint, torn or chopped or 1 1/2 Teaspoons Dried Mint
Instructions

In a large bowl place cubed watermelon. Drizzle lime juice, lime zest, and mint onto the watermelon. Carefully stir, serve and enjoy! Refrigerate leftovers up to two days.
*Ellie likes to use the juice of one lime and its zest, but you can add more if you like. Taste and add more mint if you desire as well.
