Doesn’t that look yummy?  Look at the rainbow of beautiful colors.  That’s exactly what you want to get the variety of vitamins you need.  And this should constitute at least half of your plate.  I admit that hasn’t always looked yummy to me.  I’ve had to start with one bit at a time.  If you aren’t a salad or greens lover, I suggest you just start with one bite at a time, one leaf, not joking.

The Green Salad

The Ingredients:

  • 3 handfuls greens, in season lettuce, spinach, etc…
  • tomato, chopped
  • broccoli bunch, chopped
  • carrot, peeled and chopped
  • feta cheese (omit for lactose free)
  • walnuts, handful
  • dressing: recipe below

The Dressing Ingredients: We are having dressing in the way my sis says they do in Europe where she’s lived a couple of different seasons in her life.

  • Extra Virgin Olive Oil, drizzle
  • Balsamic Vinegar, drizzle

Easy and tasty!  You can also add salt and pepper to taste, but not too much (dad). Do you want a way to drink your vegetables, too?  Try this:
