Meaty Zucchini Bake

Ingredients

  • 1 onion diced
  • 2 Tbs avocado coconut, or olive oil
  • 1 pound ground beef
  • 3 cups zucchini sliced and diced
  • 1-15 ounce can of diced tomatoes or 1 1/2 cups of tomatoes, diced
  • 1-15 ounce can of corn Mexi-corn, or 1 1/2 cups of corn
  • 1 bell pepper diced
  • 3-5 cloves garlic minced
  • 1 Tbs cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • optional 2 dashes of tumeric
  • optional 1 dash of Cayenne pepper
  • optional cheese

Instructions

  1. On medium heat place oil in skillet and let warm.
  2. Place diced onions in skillet, and heat until translucent.
  3. Add ground beef, and heat until fully cooked.
  4. Put ground beef mixture in a bowl.
  5. Place zucchini, tomatoes, corn, bell pepper, garlic, cumin, salt, pepper, turmeric, and Cayenne pepper in skillet, and cook until zucchinis are softened.
  6. Add back the ground beef mixture.
  7. Top with cheese if desired.
  8. Remove from heat when cheese is melted, and serve. If you want to brown the cheese, place entire skillet in the oven under the broiler for 3-5 minutes watching VERY carefully as to not burn the cheese.
