Turkish Garbanzo Bean Salad

Ingredients

For the Salad

  • 3 cups cooked garbanzo beans 2 cans
  • 1/4 cup fresh parsley chopped (can sub cilantro for a different flavor)
  • 1/4 cup red onion chopped
  • 1/4 cup dried apricots chopped

For the Dressing

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 t Dijon mustard
  • 1/2 tsp garlic minced or 1/8 tsp garlic powder (or to taste)
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • dash of tumeric for its anti-inflammatory properties

Instructions

  1. In a small bowl combine all sauce ingredients, and mix well.
  2. In a medium bowl combine the salad ingredients, and mix well.
  3. Pour dressing over bean salad, and stir to thoroughly combine.
  4. Serve immediately, or you can make ahead and refrigerate until ready to serve. In fact, it's best this way!
