Healthified Hot Pockets

Ingredients

  • pizza crust can use easy 4 ingredient homemade recipe here-this recipe can be soaked for better digestion
  • 1 cup cubed ham
  • 1 cup finely chopped broccoli
  • 1 cup finely chopped cauliflower
  • 1 cup of mashed potatoes optional (I had them leftover from Easter, and they made a great addition)
  • 3/4 cup shredded cheddar cheese
  • 1/3 finely chopped bell pepper I used red
  • 1/3 finely chopped onion I used red onion
  • 1/3 cup olive oil
  • dash of cayenne pepper I almost always add a dash to a main dish
  • salt and pepper to taste
  • egg white to make the crust shiny and golden optional (I did not do this)

Instructions

  1. Preheat oven to 400 degrees.
  2. Combine all ingredients except pizza crust in a large bowl.
  3. Roll out the pizza crust on a floured surface.
  4. Cut into your desired shape, remembering it will be folded in half.
  5. Spoon ham mixture into your shaped pizza crust.
  6. Fold crust over, and press the edges down with your fingers.
  7. Use a fork to press down the edges, to make a nice, decorative edge.
  8. Bake for 17-22 minutes, or until edges are a golden brown.
