BLAT Salad
Growing up by far my favorite sandwich was the BLT, the bacon lettuce tomato sandwich. We had the classic sandwich on white bread with protein and some peripheral veggies for good measure. Let’s just say the way we made it wasn’t the healthiest.
In my eternal effort to add filling salads to our main course repertoire, I was delighted to add this BLAT salad to our dinner rotation. You can make it even more filling by adding grilled chicken to the salad.
Last winter my friend Jen inspired me with her spinach salad. With bacon, avocados, tomatoes, cucumbers and dijon vinaigrette, the salad was a magnificent burst of flavors. At home the first time I attempted to recreate the salad, we didn’t have any spinach or cucumbers. So I broke out the lettuce, whipped up a dijon vinaigrette and this salad came together in a divinely-inspired way. Substituting the lettuce for the spinach and sans cucumber, this salad made me think back to that classic BLT sandwich. Thus, born was this BLAT salad. So doesn’t look anything like the original salad I had, but I can’t deny that it was my motivation and model.
This BLAT salad is my favorite salad to bring to potlucks. Bacon is a magnet, and people are allured to the salty protein. I try to keep all of the ingredients for the BLAT salad on hand for a quick meal.
The bite of the red onion against the crispness of the romaine, and then the honey Dijon vinaigrette paired with the creamy avocado is unequivocally remarkable.
BLAT Salad
Ingredients
- 1 head of Romaine Lettuce chopped
- 12 ounces Bacon cooked, and diced
- 1 Avocado diced
- 1 medium Tomato diced
- 1 Tablespoon Red Onion diced
- Optional 1 Cucumber, diced
- Dijon Vinaigrette
Instructions

Arrange lettuce on a large plate.

Position remaining vegetables and bacon in rows.

Generously drizzle with the dijon vinaigrette or dressing of choice.

Serve immediately and enjoy!
