Want a great addition to plain vegetables? If you are like me, you are always looking for creative ways to get yourself and your fam to eat more veggies. This dip is so flavorful, and makes such a great complement to veggies, crackers and sandwiches.
We’ve recently come into some almonds…lots of them. I made some 4 Ingredient Chewy Almond Butter Granola Bars today, I made these chocolate clusters with almonds last week, and I’ve been snacking on this vegan roasted garlic cashew almond dip for the last month. It’s great that it’s dairy-free and vegan for those who have those restrictions.
Costco sells a similar sauce, the Hope Roasted Garlic Cashew and Almond Dip. So you may call this a copycat recipe if you will. But if any of you are Costco shoppers like I am, you know that you can’t count on Costco to carry it forevermore. And even though I bought some about a month ago, I can’t find it there anymore. Maybe it will be back later…maybe. But it is quite pricy, so if you can make your own, DO!
So yes, this is inspired by Hope’s awesome dip, but mine is thicker. If you want, you can thin the dip with water or sunflower oil a tablespoon at a time. Add more salt and/or garlic to taste. You can also make this with just 2 cups of almonds or just 2 cups of cashews, or a combination of the two. Just make sure you have 2 cups of nuts. I’ve made it with roasted garlic and when I didn’t have the forethought, I used about a teaspoon garlic power. Since I roast veggies weekly, I usually can remember to throw some cloves on the pan. There’s such a depth of flavor the roasted garlic provides, so if you can do it, it’s worth it.
Roasted Garlic Almond Sauce
Ingredients
- 1 cup Almonds
- 1 cup Cashews
- 1 cup Water
- 1/2 cup Sunflower Oil
- 1 cloves Roasted Garlic can sub with 1 teaspoon garlic powder
- 1/4 cup Lemon Juice
- 1/2 teaspoon Salt
Instructions

Place all ingredients in a high powered blender or food processor.

Blend. Make it as chunky or smooth as you prefer. Add more water or oil by the tablespoon to get desired consistency.

Enjoy with your favorite vegetables or sandwich. Store in the refrigerator for up to 5 days.
