Fast and Easy 4 Ingredient Pizza

Do you ever need a SUPER quick lunch or dinner?  One Saturday we were out and about all morning and came home, needing a really quick lunch because it was way past lunchtime and we were all hungry.  We had just gone to Trader Joe’s, and I had picked up some tortillas.  We had roasted veggies the night before with spaghetti, and I had sauce and veggies leftover.  I’ve never made a vegetarian pizza before because it never sounded appealing, but this is soooo good!

If you have never eaten roasted vegetables on a pizza or by themselves it’s time to try them! Roasting vegetables really brings out the flavor. No time like the present! Go to your fridge now and see if you have some to roast. We have used we used broccoli, red cabbage, cauliflower, garlic, onions, yellow squash and more-not all at the same time, though. And if you don’t have any to roast, by all means, go get some NOW! And roast a double batch for some good leftovers to make this pizza!

It grinds against my inner being to call this a 4 ingredient pizza, because really every “ingredient” has multiple ingredients within each of them. But when you are putting the pizza together, it feels like 4 ingredients but it’s just 4 items.

The Verdict: Wow!  This is the most tasty lunch I’ve had in a long time!!  I think it’s the roasted veggies that make this so savory.  It was so fast to throw together, too.  This is now a weekly standard lunch.  Now when I roast veggies for dinner, I always roast a double batch so we can have pizza or roasted veggies the next day.  This would be good as a quick dinner, too, or a snack. You could add your favorite protein to the mix, too, if desired. My kids’ pizza is pictured below.

Instructions

  1. Place tortillas on a greased cookie sheet.
  2. Top tortillas with spaghetti sauce,veggies & cheese.
  3. Broil at 500 degrees for 3-5 minutes-watching carefully as not to burn, or bake them in an oven at 350 degrees for approximately 8-10 minutes or until cheese is melted/browned.
