Weekly Menu Musing

I am so thankful to have our website up and running again! Hope you have had a great start to March. And I am so excited that we’ve just had Daylight Savings! Thank you, Lord. Just what I needed to get through this grey winter. I love it when it gets dark later. It’s so nice to hit 7pm and sundown is only just becoming a thought here in the Pacific Northwest. It’s not even pitch black outside at 7:30pm. Love it!

Now for the loose weekly menu musings…

Breakfast:

Strawberry Shortcake: Dessert for breakfast?!? I actually feel great giving my family strawberry shortcake for breakfast because these biscuits are only 4 ingredients, and the biscuits and strawberries only contain natural sugars. The only added sugar might be in the whipped cream. The family has had strawberry shortcake for breakfast twice in four days:). They aren’t complaining! I make the biscuits and smash the strawberries the night before, and we are ready for a fast, tasty, and filling breakfast!

Whole Wheat Waffles: Here is another breakfast you won’t hear my kids complaining about, whole wheat waffles! I love using my blender to make waffles. They are so easy to pour right out of the container.

And then we’ll have our normal crock-pot steel cut oats, and homemade granola, too.

Dinner:

Taquitos: Last night we had taquitos, and I doubled the batch of filling so I could make crock-pot taquitos for tonight, too.

And we are having a night out at Palisades where we’ve had a gift certificate for almost a year (oops!), and then we are going to the Jazz Alley to hear Arturo Sandoval, the best jazz trumpeter in the world! Fun!

Dessert and Snacks:

3 Ingredient Healthified Chocolate Crispy Treats, G-F: These treats are made with only almond butter, chocolate crispy cereal and honey, agave, or maple syrup.

5 Ingredient Pop Tart-inspired Toaster Pastries
