At this point we have been eating granola for cereal for the last seven months.  Jonathan (my husband, also known as JSarr) says it is his weakness, especially when he was experimenting with low carb eating for a two week stretch a few months ago.  He didn’t give into temptation, by the way; he’s strong-willed. We don’t eat granola cereal every day, as we still eat steel cut oats (our only hot breakfast during the week), some natural or organic boxed cereal, and a special hot breakfast on Saturday mornings like eggs, waffles or 4 ingredient protein pancakes.

Since JSarr has been more aware of his carb intake, I thought it would be a good idea to make oat-less granola, similar to what my friend, Leila, has made.  I also wanted to use peanut butter, as I was also inspired by my friend, Teresa’s, Peanut Butter Granola (which did has oatmeal).

I also wanted to make it in the crock-pot, since the crock-pot is more forgiving if you leave your food in a few minutes too long.  Anyway, I have provided instructions for making this Lower Carb Peanut Butter Granola in the crock-pot or in the oven.

The picture below shows the nuts coated in the peanut butter and honey, without the coconut, and before cooking.  The first time I saw this I thought it looked too moist and wouldn’t turn out right, but the moisture gave the nuts the glue needed to hold the coconut to coat them.  So yum!!

Warning: you can burn granola in the crock-pot, so make sure that you check your granola every 15-10 minutes, and more as you get closer to completion!  I know; I’ve done it:(.

Peanut Butter Coated Granola

Crock-pot or Not Lower Carb Peanut Butter Granola

Ingredients

  • 1 1/2 C walnuts (chopped if desired)
  • 1 1/2 C pecans (chopped if desired)
  • 1 1/2 C almonds (chopped if desired)
  • 1/3 C honey (agave for vegan)
  • 1/3 C natural peanut butter
  • 1 C unsweetened large flake coconut
  • 1 C dried cranberries (can leave out and add after baking if desired)
  • optional 3 T TriMix (1 T Wheat Germ, 1 T Wheat Bran, 1 T Oat Bran)
  • 1/4 t salt
  • coconut oil to grease the crock-pot

Instructions

  1. Grease the crock-pot.
  2. Combine all dry ingredients (I like to add my cranberries after cooking).
  3. Combine honey and peanut butter and heat until the mixture is softened.
  4. Mix wet and dry ingredients.
  5. Cook in the crock-pot on high, stirring every 15-20 minutes or until golden brown.
  6. Cool and store in an air tight container.

Oven Directions:

  1. Preheat the oven to 300.
  2. Combine all dry ingredients (I like to add my cranberries after cooking).
  3. Combine honey and peanut butter and heat until the mixture is softened.
  4. Bake for 35 minutes or so, stirring every 10 minutes or until golden brown.
  5. Cool and store in an air tight container.

The Verdict: Ooo…  I am in love with this recipe!!!  I am nuts for nuts, though, and this is nut-dense.  I love how the nuts are coated with the honey-peanut butter glaze.  I have a hard time resisting the temptation of not snacking on them 24-7, as they make a great snack!

Since I’ve been making granola in the oven for months now, I know the one thing that is a hassle is taking it out of the oven every time it needs to be stirred.  Not a big deal, but it makes me appreciate making it in the crock-pot way more since I can just stir it right in the pot!  Easy!   Convenient!  Love it!

    After I made this recipe I pressed it into a pan and scored it for bars. Let it set in the fridge, dipped each bar in melted dark chocolate, sprinkled lightly with sea salt, and ta-da, homemade Kind bars (sea salt chocolate). Yum! Thank you!
