Happy Valentine’s Day Week! I hope you take the week (and really everyday) to let those around you know how much you care and appreciate them!
So far I am liking writing a more detailed menu for the week since it’s forcing me to look at my fridge more closely and waste less. We never want to waste, but it’s reality folks-waste does happen. Also, I feel that the menu is still loose enough for me to feel comfortable. I hate being restricted by a highly detailed menu that tells me what I am making on an exact day. What if I get pin-spired and find something I really wanna make that day? Well, I have enough flexibility that I’ll just do it.Or what if I have an abundance of leftovers that will make another meal or two. I have the flexibility to go with the flow. The biggest thing is that I don’t want to waste, so meal planning is really helping me in this category.
Breakfast:
We’ll have some smoothies as an addition to breakfast.
And we are out of granola AGAIN! Last time I only made a double batch and it was gone in close to a week. I don’t remember what prevented me from making a quadruple batch of granola like I normally do, but I see why I normally make so much at a time-granola is gone in a flash around this place! So back to the crock-pot I go for some crock-pot granola.
We enjoyed some sourdough doughnuts this weekend.
Two of the mornings we’ll have crock-pot steel cut oats.
Dinner:
This week we have some Orange Ginger Chicken leftover from the weekend.
I also made a batch of quinoa Saturday that I intended to give to a family and then plans fell through, so I am making black bean, avocado and lime quinoa.
I’ll crock-pot a big batch of drumsticks, and we’ll have salad and sweet potato fries with the drumsticks that night.
I was asked to bring my Noodles with Spicy Ginger Sauce to a gathering this week.
I have to make some pesto, like yesterday, since my fresh basil ain’t lookin’ so fresh anymore. So we’ll make a chicken pesto pizza.
And maybe we’ll even have a Valentine’s dinner out:). I am trying to convince JSarr to not do it on Friday night because it’s FRIDAY night and there will be a ton of people out. How about a Saturday brunch or early dinner?!? We’ll see…
Snacks and Dessert:
For snacks we just armed ourselves this weekend with Double Chocolate Energy Bars and homemade KIND bars.
We have just a few of these grain-free almond butter brownies left. I hate to admit the kids have hardly had any because their mom has ate most of them:(.
I topped the brownies with a dairy-free cashew frosting. I subbed the macadamia nuts for cashews and used coconut oil instead of butter.
I am also making a dairy-free “cheesecake” for a potluck, but I am going to try to make it with strawberries instead of raspberries.

Hi Sonja, I am absolutely amazed at all that you do. At 65, with a lot of arthritis pain, I don’t do so much anymore. I used to be very involved with music in church, but can’t anymore. As much as I love looking at all your recipes and suggestions, I’m even more fascinated with the pictures. Do you do your own photography? If you do, you have quite an eye for it. I’ve seen pics in magazines that aren’t as good. Keep up the good work! Blessings!
