Woh! My kids are on Thanksgiving break like tomorrow! Can’t believe it’s already upon us!
Since Thanksgiving is next week, I am going to be working on clearing out my fridge today, and tomorrow, and the next day, and…So I am really taking inventory of the fridge and trying to use up the goods.
Main Meals:
4 Ingredient Pizzas: We still have some have ham left from our crock-potted ham. So tonight we are having super fast pizzas with a tortilla for the crust. I use the ham like you would Canadian bacon. I also have some turkey pepperoni to try~it’s new to us. I’m gonna sauté onions and bell pepper as a flavorful addition and topper.
Basil Pesto-Ellie picked out a beautiful basil plant at Trader Joe’s over a week ago. It’s been BUSTIN’ with basil leaves that needed to be used, oh let’s say yesterday. So I’ll make basil pesto and have a red sauce as options.
Pasta: Since we’ll have leftover pesto and red sauce from the pizza, next on the list is pasta. And meat choices are pepperoni and more ham.
Pasta (if we have leftovers) or Soba Noodles with Spicy Ginger Sauce and Bell Peppers: Today when I was at the store my cart was void of bell peppers unlike normal. You see, I’ve gotta use up what I have before next Thursday. And I’ve got more red and yellow bell peppers beggin’ to be eaten. And lowering my head in shame I still have some Spicy Ginger Sauce left from when I made it in October or November. But it’s all good~it’s got apple cider vinegar in it! This might be our favorite meatless Monday dish (but we don’t always have it on a Monday:).
Potato Soup: I have a perpetual crock-pot broth going using up my vegetable and chicken bone scraps. We also have some potatoes attempting to grow appendages (did I just admit that?), and with the remaining dregs of ham we’ll have a big crock-pot of Potato Soup.
Thanksgiving Menu
Green Bean Casserole: Okay, that should take us right up close to Thanksgiving. I’m not hosting this year (first time in several years, but I still hope to crock-pot a turkey). I’m attempting to make this Green Bean Casserole from Damn Delicious dairy-free with almond milk and cashew cream (soaked and blended cashews).
Crock-pot Cranberry Orange Sauce: I’ll also be making the Crock-pot Cranberry Orange Sauce on the side. There’s nothing like making the cranberry sauce from scratch. It really is a fix it and forget it side, stir, and forget it some more.
Pumpkin Streusel Pie: And for dessert a dairy-free, gluten-free Pumpkin Streusel Pie. Yum!

Leftovers: And then for Thanksgiving leftovers, here are 11 ideas for shredded turkey (or chicken). I love the turkey nachos for a quick lunch. The turkey soup is a no-brainer, and then the kids’ favorite is turkey pot pie of course!
