Easy Soup, Bean, and Chili Recipes
When the crisp cool air of fall sets in, the most sensible, suitable and superior supper is soup. And on those bitter and biting frigid winter days, chilies and soups become a comfort, a staple.
To break up the monotony of having the same soup every meal, I put together a list of easy soup and chili recipes. Most of the soup and chili recipes can be thrown in the crock-pot at the start of the day. So when you walk in your door, you are greeted by a delightful and warming aroma, sure to cut through the chill of a icy spell.
One of the things I love most about soup is that it is so economical and really stretches the dollar! You can stretch your chicken, pork, beef, really any meat, beans, and veggies with soup. You can throw in leftovers in your soup. You can stretch your quinoa, rice, and pasta with soup. You can feed a big crowd on a small budget with soup. You’ve gotta love the versatility of soups.
A quick hint to make crock-pot soups ring with flavor: sauté the onions, carrot, and celery in a cast iron skillet before throwing in the slow cooker. There is flavor in the brown! I’ll do this even if I don’t throw those veggies in right away. Maybe I have to wait until midday to finally get a chance to sauté the veggies. I just throw them in at that time.
